Rappie Pie is made from potatoes which are grated raw, before being cooked.
What makes rappie pie made in South-Western Nova Scotia so unique is its special taste and texture. The key lies in the idea of seperating the grated pulp from the juice and then adding a special broth to replace the liquid which has been removed. A generous portion of beef, chicken,clams or wild game mixed in the other ingredients is perhaps the most important feature of the traditional recipe for the rappie pie. It is baked to a golden brown and we recommend you try eating with butter or molasses and homemade bread or rolls.
